The Mocha Chocolate Chips are made with a healthier cookie in mind. They have both all-purpose and whole-wheat flours, less sugar, and healthy walnuts. Yet they are delicious!
CHOCOLATE CHUNK COOKIES WITH OATS
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 large egg
1/2 tsp vanilla extract
3/4 cup all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup quick oats
1 1/4 cups chocolate chunks
Preheat the oven to 350 degrees.
Lightly grease 2 large baking sheets; set aside.
In a large mixing bowl combine the butter, granulated sugar and brown sugar. Beat at medium speed with electric mixer until creamy. Beat in the egg and vanilla.
Into a small bowl sift the flour, salt, baking soda, and baking powder. Add flour mixture to the creamy mixture, beating constantly. Stir in the oats and chocolate chunks.
Spoon dough by tablespoonfuls about 2-inches apart on the prepared cookie sheets. Bake at 350 degrees for 8 to 10 minutes or until lightly browned. Allow cookies to cool 1 minute on the baking sheets. Transfer to wire racks to cool completely.
HEALTHIER MOCHA CHOCOLATE CHIP COOKIES
2 cups all-purpose flour
1/4 cup whole-wheat flour
1 tsp baking soda
1/2 tsp salt
1 cup butter, softened
1 cup granulated sugar
1/2 cup Splenda Granulated
2 eggs
2 tsp vanilla extract
1/4 cup instant coffee powder*
2 squares (1-oz each) unsweetened baking chocolate
1 cup semisweet chocolate chips
1 1/4 cups chopped walnuts
Preheat oven to 350 degrees.
Place the chocolate in the top of a double boiler over simmering water and cook, stirring often, until melted; remove and allow to cool.
Mix the all-purpose flour, whole-wheat flour, baking soda, and salt together in a small bowl; set aside.
In a large mixing bowl beat the butter with the sugar and Splenda, with mixer on medium speed, until light and fluffy. Beat in the eggs, vanilla extract, coffee powder and then add the melted chocolate; beat until blended.
With mixer on low speed, gradually beat in the flour mixture just until blended. With a silicone spatula or a wooden spoon, stir in the chocolate chips and walnuts. Drop the dough by tablespoonfuls, two inches apart, onto ungreased cookie sheets. Bake at 350 degrees for 10 to 12 minutes or until cookies puff up and the dough loses its shine. Allow to cool 1 minute before removing from the cookie sheet to wire racks to cool completely.
Among the largest manufacturers of chocolate and confectionery products in America is known as a company called The Hershey Foods Corporation. The company is a major exporter of chocolate-related products and has additional factories in Canada and Mexico. This company was founded in 1894 by Milton Hershey which is located in Hershey Pennsylvania.
By the age of fifteen, the young Hershey, following a candy apprenticeship attempted to run his own candy shop in Philadelphia which failed after six years. But undeterred by his failure he continued to operate on his business idea of making caramel with fresh milk until in 1886 he returned to Lancaster founded the Lancaster Caramel Company and made a success of the company until he sold it for $1 million in 1900.
Seven years after founding the Lancaster Caramel Company, Hershey made a decision to concentrate on making chocolate-covered caramels after buying a German chocolate-making machine and in 1894 he established the Hershey Chocolate Company that manufactured baking chocolate, chocolate coating, sweet chocolate and cocoa. A dedicated chocolate manufacturing plant was constructed by the company in 1905 and shortly the local community was dominated by the Hershey name together with the company’s activity for chocolate for love.
The firm went from strength to strength although Hershey would not trust in advertising and marketing and he made a poor investment in Cuban sugar in the 1920s. The Great Depression saw a downturn in the market but to survive Hershey open his doors to public tours to promote his chocolate by referral and kept the regional population employed through various construction projects.
However, Hershey generously did not stop there, he and his wife, who were childless established a school for orphans in 1909, the Hershey Industrial School, which has eventually renamed the Milton Hershey School in 1995 and still owns 35.5 percent of the company’s stock via a trust fund.
In 1945 following Hershey’s death the firm continued in the ‘giving’ tradition of its founder and established the Milton S. Hershey Medical Center of Pennsylvania State University in the town of Hershey.

Perhaps this is a good time to explain the rather curious title of this article. A few years ago the marketing department of a malting company that I worked for wanted to promote, with the wider general public, the important uses of malt in everyday food and drink. So they conducted a very simple piece of consumer research where they asked members of the public what malt was. One of the respondents stated that it was what his cat did in the summer. Sadly this nicely illustrates the point that a large majority of consumers do not know what malt is or what it can be used for. What the respondent in our study was referring to was molt, which is indeed when a cat sheds its fur in the summer, rather than malt the key ingredient in the brewing of beer. For obvious reasons and for the purpose of this article we will be discussing malt rather than molt.
So what is malt? Malt is any grain that has been steeped, germinated and kilned and can be made from grains such wheat and rye although the majority of malt produced in the world is derived from barley. Grains such as barley are essential for brewing because they are the source of simple sugars that the yeast utilize during fermentation to produce alcohol. If we look at a grain of barley it essentially consists of an embryo, the “living” part of the grain, attached to a neatly packaged source of starch called the endosperm. It is the starch contained within the endosperm that interests brewers. For the grain the starch contained in the endosperm can be viewed as a source of stored energy. When the grain is planted in the ground, and all the conditions are right, the barley grain begins to germinate, that is it starts to grow from a seed into a plant. However to do this it needs energy to drive the biochemical reactions by which it can start to grow the roots and shoots that will develop into the mature plant. Once the plant has got leaves photosynthesis takes over and the plant is no longer dependant upon the energy store that was present in the initial grain. That source of stored energy is the starch contained in the endosperm. Therefore when germination begins the grain starts to convert the starch into simple sugars such as glucose which via some complex biochemical reactions provides the developing grain with sufficient energy to allow plant growth. Interestingly that is why grains have become such an important part of the human diet as a source of starch that can be converted into energy by the cells in our body.
So why not just use the raw barley grain in brewing? The simple fact is that yeast is not very good at converting starch into sugars quickly so humans, clever as we are, have developed over thousands of years the malting and brewing processes, which are designed to break down the starch into sugar that yeast can then ferment into alcohol. The first part of the process, malting, is therefore the controlled germination of barley to initiate the breakdown of starch. As we will see in the next part of this article series germination is a fascinating biochemical process with huge benefits to the beer drinking public!

People around the world drink coffee and this means that every day millions of pots of coffee are brewed and millions of wet grounds, filters and bags trashed. Many people did not know that coffee by-products have many uses in the garden and in the farm.
Are you wondering how the coffee by-products have so many uses? If you have a garden at home, sprinkle the coffee wet grounds around the plants before it rains or before watering them. This creates a slow-release of nitrogen into the soil. Nitrogen is the most important element for plant development and required in large amounts. It is essential for the chlorophyll in plants, making photosynthesis possible and the green color of plants. Plants lacking nitrogen show stunted growth and yellowish leaves. Just as too little nitrogen causes problems, too much nitrogen can also cause problems.
If there is too much nitrogen, it will produce plants with weak stems. Quality of the produced fruits, such as peaches and apples will be lower and the sugar content in fruits such as beetroot will be lower. In addition, it can lead to nitrate accumulation in edible foliage of plants. Ingesting such high nitrate foods can pose possible health risks for animals and humans.
Though nitrogen is abundant in our atmosphere, plants cannot use it directly, unless processed naturally in the soil. Therefore, by adding the coffee by-product to the soil, results in slow release of nitrogen. This is a perfect gift to your soil and plants. It is like adding fertilizer to the soil. The coffee by-product releases the nitrogen slowly into the soil that makes it so perfect. It is because quick release of nitrogen may cause harm such as burning of the leaf tissue and plant death.
Most people with a garden and a farm tend to forget about their houseplants. I hope that you are not one of them. You can mix the wet grounds into the soil of the houseplants too.
If you prefer to use fast-acting liquid fertilizer, you can mix the wet grounds in water. You can use about half pound can of wet grounds in a five-gallon bucket of water. However, remember to leave it to stand before use for an ambient temperature. Once usable, you can water the plants with this homemade, gentle liquid fertilizer.
Bring out the slowcooker or crockpot and make a delicious pot of soup or beef stew. Come home to a delicious warm bowl of hot soup on a cold day; Barbecue Beef Stew or Lentil-Ham Soup – Yummy! Surprise your family and/or friends by adding barbecue sauce to your beef stew. If you serve with rice, may I suggest brown rice. In fact, I suggest you only buy brown rice for your pantry. It is much better for you than white rice. And speaking of healthy, the Lentil-Ham soup is a very healthy dish.
BARBECUE BEEF STEW
2 lbs beef stew meat
2 tbsp canola oil
1 cup thinly sliced onion, separated into rings
1/2 diced green bell pepper
1 large garlic clove, minced
1/2 tsp salt
1/8 tsp pepper
2 cups beef broth
1 can (8-oz) diced tomatoes
1 can (4-oz) mushroom stems and pieces, drained
1/3 cup barbecue sauce
3 tbsp cornstarch
1/4 cup cold water
Hot cooked rice for serving, if desired
In a large skillet heat the oil and brown the meat on all sides. Drain off the excess fat.
Place the onion rings in the bottom of the crockpot or slowcooker; add the garlic. Place the meat over the onion rings and garlic; sprinkle with the salt and pepper. Pour the beef broth, tomatoes, mushroom pieces, and barbecue sauce, stirring to mix. Add the lid to the cooker and cook on low setting for 8 to 10 hours.
Turn the cooker to high. Blend the cold water slowly into the cornstarch until smooth; stir into the stew. Cover and cook until thickened and bubbly, stirring occasionally.
Serve over hot cooked rice, if desired.
LENTIL-HAM SOUP
1 lb dry lentils
1 1/2 cups chopped carrots
1 cup chopped onion
1 cup sliced celery
1/4 cup snipped fresh parsley
1 tsp salt
1/4 tsp dried marjoram, crushed
1/8 tsp black pepper
1 bay leaf
1 lb cooked diced ham or a large meaty ham bone
7 cups water
Put the lentils in a slowcooker or crockpot. Add the carrots, onion, celery, and parsley. Stir in the salt, pepper, marjoram, and bay leaf. Place the ham or ham bone over the vegetables. Add 7 cups water. Place the lid on the cooker and cook on low setting for 9 to 11 hours.
If using a ham bone, remove from the soup. Remove any ham from the bone and return meat to the soup. Remove the bay leaf before serving.
Makes 8 to 10 servings.
